- ¿What salmon species does Infal work with?
Atlantic salmon (Salmo salar), Coho salmon (Oncorhynchus kisutch) & Salmon Trout (Oncorhynchus kisutch).
- ¿End to end, collar & tail?
One of the most common and difficult issues to address or define is the way the tail and collar (neck) portions will be cut. Through time, at Infal we have "created" three terms to define this:
a).- End to end or completely natural tail and collar portion: considers 100% of the fillet, tail and collar portions just as they come from the fillet;
b).- Trimmed collar & tail portion is when less than 5 cm. (+/-2 inches) meassured across have to be trimmed from the tail and collar ends;
c).- Center cut portion is when more than 5 cm. (+/-2 inches) meassured across have to be trimmed from the tail and collar ends. All portions cut this way are considered center cut.
This definition has a very high impact on price. The more you trimm off, the lower the yield you get and the higher the labor involved; hence the higher the price of the finished product.
Besides the cut definition, it is also possible to define the maximum number of tail and collar portions per carton. If this definition does not match the natural proportion given by the raw material, it may also affect the finished product final price.
- ¿Portion dimensions?
If required by the customer, we can set restrictions in the size of the portions, including maximum and minimum definitions in length, width and height. It is important to cross reference the size restrictions with the target weight and weight range allowed.
- ¿Packing?
IVP : Individually Vacuum Packed. Each portion is packed in an individual pouch and vacuumed afterwards.
VP : Vacuum Packed. More than one portion is packed per pouch.
IQF : Individually Quick Frozen. Each portion is single freezed by itself with no contact with other portions and later glazed for protection.
Glaze: Ice layer that completely sorrounds each portion individually for protection against dehidration and oxidation (rancidity).
